Volcanoes evoke raw, destructive power and hostile environments that hardly seem like an obvious choice for a vineyard. The soils have a high mineral content, and although experts are divided on the link between terroir and wine flavour, there are some common attributes that volcanic wines share, such as distinct mineral quality, bright acidity, saline character and aromatic flavours. The grapes for Versante Nord, from two parcels on the cooler, north-facing side of Mount Etna, show typical Nerello Mascalese characters, spices and red cherries dominate with a mineral smoky undertone. It's vibrant and refreshingly different.

About Eduardo Torres Acosta

Tenerife native Eduardo Torres is making fresh, characterful wines on the slopes of Mount Etna. He moved to the island to intern with Arianna Ochippinti and now divides his time between working at Pasopisciaro and running his own project.

He rents two hectares of vineyards on Etna, divided among three different plots. Eduardo is wholly committed to organic farming and does everything by hand. His focus is on the classic local grapes, Nerello Mascalese and Nerello Cappuccio. Despite his young age, Eduardo is already making a name for himself with his fresh, characterful wines possessing a true sense of place.
