Fer Servadou is a spicy, dark-skinned variety, rarely found outside of Marcillac in south-west France. This expression from Domain du Cros offers a lighter interpretation of a typically robust grape, with characteristic aromas of black fruits and plums, black pepper and dried herbs are balanced by fresh acidity, earthy notes and soft, gentle tannins.
The medieval citizens of Rodez used to take Marcillac for their health because it was preferable to drinking the local water. Domaine du Cros has been in the Teulier family for several generations. In 1982 Philippe and his son Julien planted 2 hectares on their best slopes and started to work some other vineyards. They also built a new cellar for production and storage.
They practice sustainable viticulture. There is no weed killing so that the biodiversity of the flora and fauna can flourish. Their wines are a classic representation of the soil, the micro-climate and the grape variety. Made in the traditional style using tank rather than oak to preserve the intrinsic flavours of the terroir, the place where the vines grow.
