This is not Gruner like you know it. The fruit is from super low yielding vines producing the most beautiful fruit, pressed and fermented slowly and gently. The wine is precise and fresh and yet rich. Mouthwatering citrus and herbal tension run alongside candied peel and sweet ginger spice. A yeasty, leesy note compliment this perfectly. It is structured, lingering and a treat the whole way. This wine will stand up to some food with a bit of punch; pork schnitzel with a pickley salad gets the vote.

Not quite star-bright pale amber. Supernatural in many ways! This is a fine wine with the merest suggestion of ginger beer, the product of a very long fermentation, and should satisfy both classicists and naturalists. Good for the Zillingers for presenting a new-wave wine that is so delicious. It's certainly fresh, long, intriguing and without flaws. There's a richness here that suggests it would go well with quite salty or acid dishes. It was a good match with my hummus with caramelised onion. It goes on and on! And was still looking good 24 hours on. (JR)

Herbert and Carmen Zillinger’s approach in the vineyard reflects their deep commitment to biodynamic farming and a closed-loop ethos. Their plots sit between 200 and 230 metres above sea level on predominantly loess soils, and the family cultivates their own compost while integrating sheep and goats for natural grazing. This focus on soil vitality and biodiversity underpins the clarity and precision found across their wines.
The vineyards lie in the gently undulating landscape of the Weinviertel, where loess brings both warmth and finesse to Grüner Veltliner. The altitude and cooling influences of the wider Vienna Basin help retain acidity, allowing the Zillingers to craft wines that are structured yet vibrant. Their biodynamic work enhances the region’s natural balance, emphasising purity rather than power.
