Macerated on the skins for 7 days, but firmly still in the 'white' and not 'orange' camp. 100% native grape Zelen, very stony and flinty on the nose, and mineral and textured on the palate with an intriguing mix of oyster shell saltiness, and ripe, almost tropical fruits.
