This wine is a blend of native Georgian grapes fermented slowly underground in a traditional Georgian clay Qvevri. It has a beautiful hit of bergamot on the nose, tinned pineapple hot on its heels and tart granny smiths bringing freshness. Nutty hints and dried apricot bring some depth and carry the finish. The skins are left in throughout this slow fermentation bringing a power and silky tannin structure. Serve this punchy wine beside grilled lamb and baba ganoush.
