Vault is an independent English aperitivo distillery that started in London and specialises in English wine based vermouth. Dan Joines began the project in 2018 with the vision of bringing the art of the aperitivo to the UK from Italy. He begins with English wine and builds his vermouth and bitters with fresh foraged botanicals through vacuum distillation. This has two main benefits; the first is the protection that fermenting at a lower temperature gives to the brighter flavours in the vermouth, the second is the positive environmental impact this has. Vault are really focussed in their protection of the environment in their business. The products are bottled in recycled glass, and every part of the packaging is recyclable. They’re also planting a tree for every order placed. So let’s help them plant a forest!
