Knock your face off good! This incredibly rare saignée method Champagne is complex, red-fruited and peppery. Just like the colour, this wine is a heady riot of rapberries and red cherries. Peppery, sappy savoury notes are the calling card of the Pinot Noir that has been bled.
The fruit comes from a vineyard planted on Portlandian Limestone, which makes up only 1% of the region. Bertrand is making this wine as a tribute to his elders; "as children we used to drink my grandmother's red wine from the Sorbée vineyard, which was traditionally planted with gamay – it was 10% alcohol and we would drink it in summer mixed with water."
