This sparkling wine has an intense yellow fruit profile of apple, quince and pear, with a brioche and pastry note from 36 months on lees. This flavour profile, when combined with a crisp acidity, promise a wine that will not only sing in the glass today, but will age well too.

A cool spring and summer gave way to a warm Autumn in 2021- the grapes began their journey slowly but caught up at the last minute and this gives us a really wonderful balance of structure and intense flavour. This also arms this wine to be a great accompaniment to food- a squash risotto could be the perfect match.
