The elegance of this wine cannot be overstated. The nose is heady with aromatic dried flowers and dried thyme. The fruit is dense and generous, led by black cherries. Firm tannin and a long finish give this wine the structure to hold the flavour. This is going to pair perfectly with the sort of game stews made in Piedmont, but if it's not stew sort of weather, a fatty steak cooked on charcoal would be perfect.
