The whisky was distilled in March 2015 and after ten years in Bourbon Hogsheads, was full of waxy orchard fruit with a touch of nutmeg. James and Jamie then gave it a year in Napa Chardonnay barrique where it has picked up leesy and malolactic characteristics showing up on the palate as lemon meringue pie and almond croissants. It is an elegant dram and the punchy cask-strength ABV hides in plain sight. With a few drops of water this opens beautifully, but for us, we're drinking it neat.
This project is about James and Jamie, who have been bottling and blending whisky for just three years, although they spent seventeen years tasting, buying and selling other people’s whisky before they took the plunge and started their own project. It’s an adventure and we’re along for the ride.
Every bottling is a one-off. They travel across Scotland sniffing out barrels to bring home to Leith where each is treated completely differently. Some bring balance to a blend, and some are conditioned and aged until it is just right for bottling. This operation is properly tiny; James and Jamie have selected the whisky, racked it, blended it, bottled and labelled it themselves.
