The third wine from the Salt of the Earth project, this is another wonderfully crisp and mineral wine to complete the trilogy. Made in collaboration with superstar South African winemaker Bernhard Bredell from Scions of Sinai, this is a thrilling and energetic Chenin Blanc sourced from a beautiful plot of dry-farmed, old vine Chenin that sadly no longer exists; a real one off.

Fermented and aged in old 300l barrels, freshness here is key, along with 48 hours of skin contact, giving the wine phenolic interest and incredible structure. A vital, thrilling wine that shimmers with salted lime zest, fresh quince, granny smith apples and grapefruit, tempered by a creamy, hazelnut flavour and a waxy texture. Saline and scented with the Cape sea breeze.

Light nose with some green notes on the nose and real grunt on the palate. Verging on ‘natural’ flavours with great natural acidity and texture. Still quite astringent but this clearly has a future. Long, vibrating finish, but I’d wait a little while before broaching this in order for that chewiness to recede. (JR)
