This bright sparkling wine makes the perfect aperitif. The wine is led with a floral note of jasmine and honeysuckle. Apple and ripe juicy grapes are bolstered by richness and texture from time on lees and the wine finishes with freshness.
This is a Classic Penedès; a traditional method sparkling wine from the North East of Spain. Grapes are grown at an elevation of 400m above sea level from old vines, bringing concentration to the grapes. This is followed by 24 months on the lees after secondary fermentation which adds richness and texture to the wine.
Colet is a family winery- one of only 18 producers of Classic Penedès. Sergi did a Masters of Champagne and worked at Pol Roger and built his experience working at Gramona. When he came back, he and his father decided to change how the family had been working. Farming their vineyard since 1783, but mostly tenant farmers, they flipped this on its head. They stopped farming for maximum yield and decided just to work with their own grapes.
To make Classic Penedès, the wines must be made from organic, estate grown grapes. They must be made in the traditional methos and have a minimum of 15 months in bottle with vintage and disgorgement dates must all be on the bottle. Sergi and his family are so proud of their products and are proud to fly the flag for Penedès.
