Oloroso means “very aromatic”, and this one does justice to its name. The nose displays layers of caramel, chocolate, prunes, toasted almonds and a slight salty edge. Take a sip and the palate is full-bodied yet completely dry, leaving the palate clean while flavours of roasted nuts and dried fruit linger.
El Maestro Sierra was founded in 1830 by master cooper José Antonio Sierra. This was a bold move at a time when the Sherry trade was controlled by aristocratic families who scoffed at a humble worker trying to become an almacenista. José Antonio didn't let them put him off and built one of the most respected in the Sherry Triangle. The bodega is still in family hands today.
They work in a traditional way, topping up the casks and performing the 'saca' by hand, filtering is minimal and no SO2 is added to the wines, which are known for their trademark yeasty flor notes intensified by the high location of bodega exposed to the cool Poniente winds.
