This is a fun collaboration between The Sourcing Table's own Ben Henshaw and the talented Leo Erazo of Chile's innovative winery Rogue Vine. Leo makes this Pet Nat from a blend of Muscat of Alexandria and Criolla Blanca; both delightfully aromatic varieties that make for a fragrant, fruity fizz that still has plenty of depth. Quite remarkably serious in style and well suited to a range of spicy dishes.
