It's wines like this that are redefining what Penedes is capable of. This region, best known for producing Cava, has broadened its horizons to craft exceptional still wines and Celler Pardas is leading the charge. 'Rupestris' is a blend of native varieties Xarel.lo and Malvasía de Sitges (which is often compared to Riesling). The result is a crisp, yet textured white with moreish notes of ripe pear, lemon and gun smoke.

Celler Pardas is part of the new generation of producers in Catalonia, focussing on local grapes such as Xarel.lo, Macabeo and Sumoll. The project began in 1996 when local winegrowers Ramón Parera and Jordi Arnan bought the Can Comas estate high in the Penedés. This stunning, medieval farmhouse was surrounded by 60 hectares of forest, pasture and shrubland, cut through by the Bitlles River. This unique terroir instantly jumped out at them, and they set to work clearing the area and started planting vines.
Their focus is on preserving the balance and health of their land. They farm organically without irrigation, aiming to always work with nature and not against it. It was a labour of love, taking until the 2004 vintage for their wines to be ready for the public to enjoy too. We think it was well worth waiting for such authentic and delicious wines which speak unashamedly of their origin. These are fabulous wines from a resolutely quality-focused producer.
