As with Chardonnay from Burgundy, Assyrtiko from Santorini has an intrinsic synergy that leads to distinctive, remarkable wines. This delicious example from cult producer Vassaltis is a great example of why Santorini should be demanding your attention. 

Minerality is key here, with Santorini's volcanic soil shining through, punctuated with intense stone fruits. Floral, precise, with an impressively persistent finish. The wine is aged in stainless steel only so retains vibrancy and freshness, whilst the 7 months on its lees adds weight and complexity.
