A relatively little-known grape, Timorasso is a characterful white variety that was rescued from oblivion by producers in south-east Piedmont. Don’t be fooled by its pale yellow colour; this wine is intensely aromatic with notes of yellow fruits, spring blossoms and fresh herbs. Crisp on the palate, it gives succulent flavours of citrus and orchard fruit, and bright searing acidity that will stand up to rich white meat dishes and creamy pastas (think carbonara!).
Ferdinando Principiano is part of the new generation of exciting, young, dynamic winemakers currently shaking things up in Piedmont. His original approach tended towards making 'supped-up' wines that pandered to the 1990's American critics palate. Yet he saw the light in the early '00s, and set about making some big changes that created elegant, supple wines that aged spectacularly whilst remaining delicious to enjoy when young. His vineyards are also rich with wildlife and biodiversity, as he embraced a more natural, eco-centric approach.
