Josephine and Jarkko Peranen didn't make enough wine to put 'Mimas' through the Chianti Classico tasting panels, so this is instead labelled as an IGT. An intriguing expression of this classic region. It is aged in spherical ceramic Clayvers produced by a small company in Genoa. Candialle are the only Italian winery working with them. Jarkko describes it as a 'hyper-modern amphora' which allow for slow, steady ageing (micro-oxidation) without adding any foreign flavours. The result is a pure, terroir driven Sangiovese expression with notes of red cherry, plum and dried herbs.
When Jarkko Peränen left his native Finland to work a harvest in Italy, he never expected to find a permanent home in the rolling hills of Tuscany. After working for a producer in Chianti Classico for five years, he fell in love with the beauty of the region and decided to put down his own roots. In 2002 he bought a farm and established his own label: Candialle. He and his wife Josephin have been making wine there ever since, bringing a natural approach to the wines and the vineyards, with a strong focus on organic viticulture and soil health. These are some of the freshest and most energetic Tuscan wines out there; driving innovation whilst still remaining true to their roots.
