For 12 years, Jean-François Nicq worked as a winemaker in the Côtes du Rhône. On the first of January 2001, Jean-François joined his childhood friend, Bijan Mohamadi, then a math teacher, to start a new Domaine at the very southern end of the Languedoc on the border with Spain. "The Red Scarves" is a literary reference to the works of Fréderic Fajardie, who the men greatly admired.

Their philosophy is completely against intervention in the vines or the cellar. The vines were converted to organics and vinification done naturally, without input ever. Purity is the watchword here, the first thing you notice is the freshness of the wines, and pure juicy fruit, an achievement in this hot Mediterranean region.
